Blueberry Crumble (Gluten & Dairy Free)

While I was home on vacation, I wanted to make a blueberry crumble with fresh bluberries. My husband and I went to pick the berries fresh at a cute farm stand and it turns out a very windy storm we just had ruined the blackberry crop and there weren't any blueberries left to pick. Sad face! So I bought a couple pints of fresh already picked blueberries from the farm stand and contemplated what fruity dessert I could make with them. I did some experimenting with almond flour and almond butter and created a gluten and dairy free blueberry crumble.…

Mushrooms — A Photographic Study

Admission time, I LOVE mushrooms. I love to eat them, I love to look at them, I just love them. I wish I was more adept and knowledgeable so I could forage too, but I'm not quite there yet.  In the meantime, I'll settle for eating and picture taking instead.  All of these mushrooms were at the park my husband and I went camping at.  This little guy was my favorite subject. The thing that looks like a bug clinging on is actually just sticks that were arranged just so. It made for a very good picture though. I was…

Harry Potter’s Pumpkin Pasties

Calling all Harry Potter fans! Fall is Harry Potter season in my eyes and I am so here for it. I made these lovely sweet pumpkin pasties for the first time this season and I can tell you it won't be the last.  Don't know what a pumpkin pastie is? Think pumpkin pie in hand held form. Sweet pumpkin spiced goodness encased in a golden flakey shortcrust pastry, ohhhh yea.  I plan on making these again when I do a Harry Potter themed feast and have a movie marathon. Imagine some roast chicken, pumpkin pasties, butterbeer and Harry's birthday cake…

Easy Homemade Applesauce

I. Love. Applesauce. So of course the first thing I did after I went apple picking was go home and make applesauce! It's so ridiculously easy to make too.  You can eat it for breakfast, snack, dessert...heck eat it for lunch or dinner too if you want.  For my birthday in September, I decided I wanted to go apple picking. The only variety they had that day since it was early in the season was Jonamacs. I've never had them before, but they're supposed to be good for baking.  They sure made a really yummy applesauce.  Applesauce Time! Prep Apples…

Witchy October Bullet Journal Theme

Last October for my bullet journal, I did more of a Halloween theme. For this year, since I didn't want to do the same thing, I decided on a witchy theme. I'm so excited about how this theme came out. It has exactly the vibe I was going for. Think witchy moon worshipping powerful women. Check out the difference between last year and this year: Monthly Spread October 2019 October 2020 This year the color scheme is more purples and browns, although I do use some orange still in other spreads for this month which you'll see when you scroll…

Autumn Apple Hand Pies (With Vegan Option!)

Apple anything is always on my list of favorites and these apple hand pies are a must have for the autumn season. I love apple pie, but I think I might love these even more because they remind me of the little hand pies that I used to get at the convenience store when I was a kid. I think my husband and I ate these in approximately 2 days. It would have been less, but I had him ration them so we didn't make ourselves sick. It's so easy to just pop one in your mouth, then eat another and…

September Bullet Journal: Autumn Themed

I know it's not September anymore, but I still wanted to share my September bullet journal spread for that month because I love it and this theme could be used for any month in the fall season. I was really excited to go apple picking and see the leaves change color so I decided to merge both into a fall theme to express my excitement. Each month I typically do a monthly spread, a calendar spread for memories, a habit tracker of some sort, and a spread for all my daily lists. I may add something extra or new each month…

Fandom Mail Art: Harry Potter & Avatar the Last Airbender

What's mail art you ask? It's basically just super fancy envelopes and letters. Think almost scrapbooking or collaging except with mail. One of my many hobbies is pen paling and I love to take the time to decorate each and every letter I send out. Each letter has it's own theme and recently I've made a couple fandom related mail arts that I wanted to share with you, from two of my favorite fandoms: Harry Potter and Avatar the Last Airbender.  I find that my creative process has a mind of it's own when I create letters. I get inspiration from…

Living Dairy Free—Brand Recommendations & Dairy Free Substitutes for Recipes

When I was young, my mom had my brother and I tested for food allergies and we both ended up being allergic to dairy woo hoo! So that means no more milk, cheese, heavy cream and all their variations. But living dairy free isn't as hard as you think. There are so many great alternatives out there now, it's a piece of cake to make all sorts of dairy free confections and sweets and even in my cooking too. I thought I would post about what dairy free alternatives are out there and what I use in my kitchen for…

Fruity Smore’s Bars—No Bake, Gluten & Dairy Free

After I made the Smore's Ice Cream, I had some leftover chocolate ganache and almond flour graham cracker crumbles. I vowed to try and make a new recipe with them instead of eating them.I thought what if I made smore's but in bar form, maybe with an extra flavor added in? Then the fruity smore's bar was born. It's a layer of graham cracker crumble, chocolate ganache, raspberry jam, and finally toasted italian meringue on top. YUM.  I forgot to mention to, it's no bake! The only thing that has to be "cooked" is making a sugar syrup in a…
